As a child I well remember on warm, late Summer evenings roaming the nearby fields and picking Horse and Field mushrooms to sauté for supper. Nothing reminds me more of these Halcyon days than the taste of freshly picked and cooked mushrooms. But an edible mushroom can often be quite difficult to differentiate from an inedible or even toxic mushroom. What can be even more confusing is that mushrooms and toadstools generally (even constantly) change their shape, colour and overall look during their life-cycle.
