
Abstract: This cookbook is designed to promote good health by offering recipes without added salt, sugar and fat. Guidelines for adapting favorite recipes are provided, such as sauteing in vegetable stock; broiling instead of browning in fat, marinating in yogurt, juices, or sauces; and using instant non-fat dry milk to make cream sauces.
