
Abstract: Ways to reduce salt dependency are suggested for consumers. A new world of flavors exists for the person who stops using salt. The effects of sodium on health are discussed; substitutes for baking soda and baking powder, both high in sodium content, are provided. Foods with a naturally high sodium level are identified (these must be avoided for people on very low sodium diets). Lemons, limes, (and their juices), vinegar, garlic, and a variety of other herbs and spices bring out the best flavors of foods and some tenderize also. Recipes for appetizers, soups, casseroles, salads, breads, and desserts without sodium/salt are given. (kbc).
