
The Menu Book is a compilation of fourteen 21 day cycle menus written with a geriatric population in mind. However, the menus are suitable for most age groups and can easily be adapted to meet the needs of varying populations. Provided with each day's menu is a breakdown of five different calorie levels for those residents desiring calorie controls. They are not, however, intended to be used as therapeutic diets or as substitutions for the ADA Diabetic Exchanges. For convenience sake, The Menu Book has listed on each daily menu page the breakdowns for fat, sodium, and calories for each of the calorie levels. We have followed the "Strive for Five" philosophy in our menus, including at least 5 servings of fruits and vegetables daily, even on the lowest 1000 calorie levels.
