Either way, this book will save you countless co-pays and hours of your life spent trying to correct the illnesses that a misinformed diet is likely to cause! As an appetizer, know that food is a business. And, what you eat is your business. However, the food industry knows far more about you than you know about them. And, that makes you very vulnerable to marketing, and leads to misinformed and potentially harmful dietary choices. I had the pleasure, honor, and responsibility of developing and teaching a high school course on this very topic over 15 years! Billed as the 'hardest' course in the school, it was the only course that the students couldn't leave behind when the bell rang or they graduated. They continued to eat and drink! And, they continued to make innumerable choices, no longer in ignorance, of the impact those choices would have on their bodies, on their cognitive abilities, and on their emotional states. In brief, I spent my career as a high school Biology, Chemistry and Physics teacher. I coached soccer and tennis and created a triathlon club in my school that inspired over 10 percent of our student population to participate in local duathlons, triathlons and road races. But, my most satisfying accomplishment was 'Food Science,' an elective that I developed. It was first intended to integrate the sciences, but it soon became a multi-disciplinary investigation into the food system and our apparent preference for a 'wealth-care' system over health care. I was encouraged to write this book by many of my students, who felt that everyone should have to take the course.
