
Mr. Bravery is a wine-maker of 25 years experience and a First Prize winner of the National Conference and Show of Amateur Wine-Makers. He describes amateur wine-making as a hobby not only enjoyable in itself but capable of producing results of the very highest quality. Starting with the chemical basis of wine making, the author discusses the different kinds of sugar and yeast which may be used. The subject is brought right up to date with explanations of the systematic control of wine-making by the use of scientific apparatus. This Mr. Bravery illustrates with several graphs and diagrams. From this he passes on to specific recipes for wines. These include recipes for wines made from dried fruit, fresh fruit and roots, and the author then outlines the use of synthetic musts where natural ingredients are not readily available. There is also a special chapter on the making of wines in foreign countries where different ingredients and conditions affect the process. The work of the National Conference and Show of Amateur Wine-Makers is described. One section is devoted to the special problems of exhibiting and judging wines and the qualities of flavour, clarity and color which are looked for. Also included are an index and an appendix of addresses of firms supplying all the ingredients and apparatus for wine-making.
