
After an introductory chapter on the history of bifidobacteria from 1899 to 1957 and from 1957 onwards, there are a further 8 chapters covering the biology of bifidobacteria, their fermentative activity and growth on various substrates, the human gastrointestinal flora, nutritive and health values, manufacture and technology of dairy foods containing bifidobacteria (including pharmaceutical preparations) and methods for isolation, culture and characterization of bifidobacteria. A glossary of terms, details of various culture media, and lists of commercially available and non-available media are included in appendices. The extensive bibliography of papers about bifidobacteria contains 51pp. of references preceded by a brief statistical analysis and lists of theses and patents. References to papers cited in the text but not directly concerned with bifidobacteria are listed separately.
